Behind the drink

A Southern French aperitif: pastis with a little syrup, stretched with cold water. The syrup sets the name: mint makes a Perroquet, orgeat a Mauresque, grenadine a Tomate.

Recipe reference

Uses the Provence tourism board's 3 cl pastis to 1.5 cl syrup, with water at the 1:5 ratio it gives.
