Whisky Highball
1 part whisky to 4 parts chilled soda water, stirred just once, with fine, crisp bubbles.

The Japanese version uses Suntory Kakubin; any blended whisky works
30 ml / 1.01 US fl oz - Soda Water120 ml / 4.06 US fl ozto top up
US fl oz amounts are rounded; use ml for exact measures.

Make it
- Fill a highball glass with ice, stir a few turns with a bar spoon to chill it and discard the melted water.
- Top up the ice, pour in whisky and stir about a dozen times to chill the spirit too.
- Slowly pour chilled soda water down the inside of the glass, rather than directly onto the ice.
- Reach a bar spoon to the bottom and lift it up and down just once; express a lemon peel if you like.
Behind the drink
In 2008, Suntory promoted Kakubin highballs in Japanese izakayas alongside bar food, reviving the popularity of whisky and soda.
